Por qué lo cultivamos
Cut open a Chioggia beet and its striped center gives the cutting board a little show. This Italian heirloom offers roots for roasting or pickling and green tops for another meal.
Each seed may produce several seedlings. Thin the row as it grows, and bring young thinnings to the salad bowl instead of leaving them behind.

Can I eat the greens?
Yes. Both the roots and green tops are edible, and young thinnings can go in salads.
Why are several seedlings close together?
Each beet seed can produce multiple seedlings. Thin them to give roots space.
